Our low GI tiramisu recipe 🍰

After the recipe for our low GI Pancakes from our book "Minimal Sugar, Ultimate Pleasure" , we decided to share with you a new recipe reduced in sugar for a low GI dessert!

This tiramisu recipe has a glycemic index of 19, calculated by our glycemic index calculator , feel free to use it for all your recipes 🙌.

 

TIRAMISU - IG 19
 
For 8 to 10 people
 
Preparation: 1 hour
Cooking: 15 minutes
Refrigeration: 4 hours

Ingredients for rolling biscuits:
2 whole eggs
1 egg yolk
35 ml of water
25 g agave syrup
20 g wheat bran
60 g of T150 flour
½ tsp baking powder
45 g rapeseed oil
3 egg whites
25 g coconut sugar

Preparation :

👉 Preheat the oven to 170°C and cover the baking tray with baking paper.

👉 Using a mixer, mix the whole eggs, egg yolk, water and agave syrup for a few minutes until the mixture turns white.

👉 Add the previously mixed powders: wheat bran, flour and yeast.
Mix then add the oil. Mix again.

👉 In another bowl, beat the egg whites with the coconut blossom sugar until stiff.

👉 Gently fold the egg whites into the first mixture until you obtain a smooth dough.

👉 Spread the biscuit evenly to a thickness of about 1 cm on your baking sheet and bake at 170°C for 10 to 15 minutes.

Tip 💡
Be careful not to overcook the biscuit to prevent it from breaking when rolling.
 
Ingredients for making tiramisu:
• 1 rolling biscuit
• 2 cups of espresso coffee (15 to 20 cl according to your taste)
• Unsweetened cocoa powder
 
Mascarpone mousse:
• 4 whole eggs
• 50 G of agave syrup
• 500 g of mascarpone
 

Preparation

👉 Prepare a rolling biscuit.
👉 Separate the egg whites from the yolks.
 
👉 Mix the egg yolks with half of the agave syrup until the mixture turns white.
 
👉 Add the mascarpone and mix.
 
👉 Beat the egg whites with the remaining agave syrup until stiff and gently fold them into the mascarpone mixture.
 
👉 Cut the biscuit in half and place one half at the bottom of a 20 x 30 cm dish.
 
👉 Soak this biscuit with coffee (espresso).
 
👉 Pour half of the mousse onto the biscuit and spread it evenly.
 
👉 Place the second biscuit on the mousse and soak it with coffee as before.
 
👉 Place the remaining mousse on the biscuit, spread it out and then sprinkle with cocoa as decoration.
 
👉 Put the tiramisu in the refrigerator and wait at least 4 hours before tasting it.
