Our recipe for sugar-free, low GI pancakes 🥞

This pancake recipe has a glycemic index of 24, calculated by our glycemic index calculator , feel free to use it for all your recipes 🙌.

 

For about ten pancakes
 
Preparation: 20 minutes
Rest: 1 hour
Cooking time: 2 minutes per pancake

 

Ingredients

• 100 g of T150 flour
• 70 g of wheat bran
• 4 whole eggs
• 1 pinch of salt
• 40 g melted butter or 40 ml sunflower oil
• 500 ml of whole milk
• sunflower oil to grease the pan

Preparation

👉 Break the eggs into a large bowl and whisk them together.
 
👉 Gradually add the flour, wheat bran and finally the salt.
 
👉 Pour in the milk little by little, mixing until you obtain a smooth paste.

👉 Add the melted butter (or oil) and mix.
 
👉 Let the dough rest for at least 1 hour and mix it before use to make it smooth.
 
👉 Grease a hot pan, pour a ladleful of batter and spread it evenly, then wait until it is cooked on one side before turning it over to finish cooking.
