Low GI chocolate mousse - Aquafaba

For this recipe we are going to use only two ingredients: dark chocolate and aquafaba, and will use equal proportions.

Aquafaba is the name given to the water used to cook or store legumes such as chickpeas or red beans.

200 ml of aquafaba = 200g of chocolate

👉 Melt the dark chocolate in a bain-marie

👉 In the meantime, whip up the water from the chickpeas

👉 Wait for the chocolate to cool down and add it to the aquafaba

👉 Fill ramekins and let stand for 4 hours in the refrigerator

We reassure you, your mousse will not taste like chickpeas! If you find that it lacks something, you can also add a little coconut sugar, or a touch of fleur de sel to spice it up!
