Vegan and low GI crumble

We reveal you the recipe of a crumble without white sugar nor white flour to please you with a low fat dessert.

For 6 glasses, or a crumble to be shared between 6 gourmands :

  • 50g of barley flour or T150 wheat flour
  • 50g almond powder
  • 40g of coconut sugar
  • 2 tablespoons of olive oil

👉 Mix all the powders together (flour, almond, coconut sugar).

👉 Add the olive oil and mix gently with your fingertips to obtain a wet sand texture.

👉 If you wish to use this crumble as a base for a dessert, for example, place the crumble with the back of a spoon in the bottom of a baking pan and bake it at 200°C for about 15 minutes until it is nicely colored.

👉 If you want to make it a dessert to share, select the fruits of your choice, paying attention to their GI (for example apricots or apples, GI 35). Keep in mind that the GI of a fruit increases if the fruit is very ripe, as well as when cooked. So, choose fruits that are not too ripe, and don't hesitate to mix varieties... Once cut into cubes, put them in a gratin dish, sprinkle with the crumble, and cook at 190°C for 20-30 minutes depending on your oven.

Tips: You can replace the olive oil by a neutral oil (grape seed) or on the contrary a more marked oil (hazelnut oil) according to your tastes...
