Make low glycemic index (low GI) chocolate oatmeal cookies, without white sugar or white flour!
For about ten cookies
- 150g melted butter
- 45g of coconut sugar
- 1 egg
- 200g of T110 flour
- 50g of oat flakes
- 30g of cocoa
- 1/2 sachet of yeast
- 1 pinch of salt
- 75g of crushed hazelnuts
- 150g of chocolate 70% minimum
👉 Preheat the oven to 150°C
👉 Mix 150g of softened butter and 100g of coconut sugar with a whisk or a spatula
👉 Once the mixture is homogeneous, add an egg and mix again
👉 Sift the powders (flour T110 + oatmeal + cocoa) with the yeast and a pinch of salt, add them to the mixture, and mix gently with a wooden spoon or a spatula
👉 Coarsely crush the hazelnuts with a knife, as well as the chocolate chips. Add them to the mixture and mix (be careful not to overwork the dough, the goal is simply to distribute the pieces)
👉 Form balls of about 40 to 50g and bake them on a tray covered with baking paper in the preheated oven for 9 to 12 minutes depending on your oven.
Tip: Don't hesitate to let the dough rest for an hour before forming the balls and baking the cookies. This resting time will allow the dough to soak up all the flavors of the ingredients.
