Make a low glycemic index (low GI) cheesecake, without white sugar or white flour, for 6 to 8 people :
Crumble:
- 100g T150 flour
- 30g almond powder
- 20g oat bran
- 50g of coconut sugar
- 60g of butter
Cheesecake maker :
- 300g of fresh cheese like Philadelphia
- 300g of cottage cheese
- 3 eggs
- 50g agave syrup or 50g coconut sugar
👉 Preheat the oven to 180°C.
👉 Mix the powders together (flour + almond + oats + coconut sugar). Add the cold butter, cut in pieces, and incorporate with your fingertips to sand the mixture: we try to obtain a sand-like consistency.
👉 When the dough reaches this consistency, place the crumble in the bottom of a cheesecake pan lined with baking paper, and pack it roughly with the back of a spoon. Bake in a 180°C oven for 15-20 minutes.
👉 Meanwhile, loosen the cream cheese with the cottage cheese. Add the eggs and the sugar of your choice. If you want to add a little bit of pep, you can add the juice and the zest of half a lemon, or vanilla beans...
👉 Pour this mixture over the baked crumble base, and bake again for 30-45 minutes: the cream should still be shaking in the center. Let cool at room temperature for an hour, then let the cheesecake rest in the refrigerator for at least 4 hours.
Tip: Ideally, make this recipe the day before and let it develop all its flavors overnight to enjoy it the next day! You can garnish it with fresh fruit for a low GI, healthy and greedy decoration!
