La différence entre pâtisserie classique et pâtisserie à IG bas

The difference between classic pastries and low GI pastries

Choosing between a regular pastry and a low glycemic index (GI) pastry can make a big difference to your health. In this article, we’ll break down the key distinctions and explain why opting for low GI pastries can be a smart choice.

👉 Understanding the Glycemic Index and the Ingredients That Make the Difference

The glycemic index measures how quickly a food raises blood sugar levels. The higher the GI, the faster the food releases glucose, causing a rapid rise in blood sugar.

Classic pastries, often high in refined sugar and white flour, have a GI generally between 50 and 70, which leads to rapid absorption by the body and blood sugar spikes.
On the other hand, low GI pastries, with a GI of less than 55 (and at Oh Oui !, less than 25), are made with ingredients that release their sugar more slowly and gradually.
These pastries are made with alternatives such as low GI flours (whole wheat flour, chickpea flour) and natural sugars such as coconut sugar, grape sugar or agave syrup.

These ingredient choices help slow the absorption of sugar into the blood, thereby reducing glycemic peaks, while ensuring taste bud pleasure and promoting a healthier, more balanced diet.

👉 Why choose low GI pastries?

  1. Blood sugar control : People with diabetes or those looking to stabilize their blood sugar levels benefit greatly from eating low GI pastries. By slowing down the absorption of sugar, they help maintain stable blood sugar levels throughout the day.

  2. Weight management : Unlike traditional pastries which can promote weight gain and further increase appetite, low GI pastries help you stay fuller for longer thanks to a slower and more regular release of energy.

  3.  Nutritional benefits : Ingredients used in low GI baked goods often provide more fiber, protein and essential nutrients

👉 Should classic pastries really be avoided?

Classic pastries are not forbidden, but it is important to consume them in moderation, especially if you are watching your blood sugar or calorie intake. 😉
Their high content of fast sugars, saturated fats and refined carbohydrates make them a pleasure to enjoy occasionally.
